Easy Southern Hoecakes Recipe – Crispy Old-Fashioned Cornmeal Pancakes

Let me be honest with you. These are not fluffy buttermilk pancakes. They’re not sweet (though you can make them sweet). They are savory, crispy, corny, and absolutely irresistible.

  • 5 simple ingredients –  Cornmeal, liquid, salt, fat, and optional  flour.

  • No special equipment – Just a bowl, a spoon, and a cast iron skillet.

  • Ready in 15 minutes – Perfect for busy mornings.

  • Naturally  gluten-free (if you skip the flour)

  • Budget-friendly – Cornmeal is cheap. These cost pennies.

  • Versatile – Breakfast, lunch, dinner, or snack.

  • Freezer-friendly – Make a batch. Freeze for later.

Ingredients – The Simple, Honest List

For the Hoecakes:
1 cup yellow or white cornmeal (stone-ground is best, but any works)

1 tablespoon all-purpose flour (optional – for a slightly less crumbly texture)

½ teaspoon salt (or more to taste)

1 cup boiling water or buttermilk (see notes)

2-3 tablespoons bacon grease, butter, or oil (for frying)

Bacon

For Serving (Optional):
Butter (to melt on top)

Maple syrup or honey (for sweet version)

Salt and pepper (for savory version)

Fried eggs (on the side)

Bacon or sausage (because everything is better with bacon)

Substitutions & Swaps:
No bacon grease? Use butter, vegetable oil, coconut oil, or lard. Bacon grease adds incredible flavor, but any fat works.

No buttermilk? Use boiling water (traditional). Or add 1 tablespoon vinegar or lemon juice to 1 cup milk and let sit for 5 minutes.

Gluten-free: Omit the flour or use a gluten-free flour blend.

Sweet hoecakes: Add 1 tablespoon sugar and ½ teaspoon cinnamon to the batter. Serve with maple syrup.

Herbed hoecakes: Add 1 tablespoon fresh chopped chives, scallions, or parsley.

Step 1: Choose Your Liquid
Traditional hoecakes use boiling water. Buttermilk makes them slightly richer and more tender. My daddy used whatever he had. Both are good.

Pro tip: If using water, bring it to a rolling boil before adding to the cornmeal. This “cooks” the cornmeal and creates a softer texture.
